OUR NUTRITIONAL PROMISE

Each visit to the Kitchen Garden is an opportunity to savour a balanced meal. You’ll find a diverse range of meats, fish and vegetables on offer, whether you’re here for our restaurant menu, a long-table event or coming to celebrate at a wedding.

PROVENANCE

A nutritional meal starts with sourcing the right ingredients. We explore the options when it comes to finding the best produce and, importantly, we know our producers well; we visit them to get to know their methods and ethos and they visit us to see how we’re using their ingredients. These relationships offer opportunities for sharing valuable information. We can tell you how and where your lunch was grown, when it was harvested, and we love nothing more than to share our recipes. From a nutritional point of view, we will use wild and grass-fed animals where possible, which are high in macro-nutrients, and we major in our own whole vegetables which are grilled rather than boiled and puréed.

PROTEIN

We’ll design our menus with recommended daily intake (RDI) in mind. Our menu is vegetable-led, with the protein playing a supporting role. We usually offer two red meat options, and advise that guests stick to 2-3 servings of red meat (320-480g cooked weight) per week to maintain a healthy, balanced diet and to help the environment. A typical portion of red meat at PKG will weigh 160g so this is one of your three servings for the week. Opinions on red meat vary, and we keep an open mind, looking at portion sizing and regularly assessing the likely impact on our health and the environment.

PUDDING

Dessert can be a pitfall for nutrition. Whilst we love to serve an indulgent pudding, we do this mindfully, knowing that ‘less is more’ when it comes to sugar. Our approach to whole vegetables carries through to fruit. In the creation of our dishes, we try and use the fruit pulp and skins so that the fibre is retained. We will flavour desserts with our own homegrown fruit preserves which contain less sugar than your average jam. We use sugar sparingly and will often substitute sugar for 70% dark chocolate or whole fruit. A typical pudding at PKG will be 250 calories which is 12.5% of your recommended daily calorie intake.
